These are a strange animal – light fluffy pillows of goodness. A cross between a cookie and a cheesecake. ¾ cup (175 mL) unsalted butter, softened 3 Oz. (90g) cream cheese ⅔ cup (150 mL) sugar 1 tsp (5 mL) pure vanilla extract 2 cups (500 mL) all-purpose flour Graham Cracker Crumbs, for coating Preheat oven to 375ºF (190ºC). In a bowl, beat together butter, cream cheese, and sugar. Mix in vanilla extract. Stir in the flour until well combined. Chill for half an hour. Form into 1″ balls, and roll in graham cracker crumbs to cover. Place cookie balls onto a baking sheet. You can leave as balls or flatten with a fork if you wish. Bake for 12 to 15 minutes, until the edges are golden and the tops are slightly puffy.
